So the day before you made your roast and loved it, but didn’t eat it all. Now, it’s time to re-use the meat for a little variety.
What you’ll need:
- Leftover roast, shredded
- Dash or two of cilantro
- Dash or two of Cumin
- Lots and lots of garlic
- Onion powder or minced onion or – heck, use the real thing and dice it up all nice and fine
- 15 oz can of tomato sauce (or for something really special add, fire-roasted tomatoes to it as well)
Combine all ingredients in a pot on your stove top. Let simmer for 15-25 minutes until you are satisfied with the taste. Pull out the flour tortillas, heat those up, fill em up and add any encoutrements you desire, like cheese, lettuce or salsa.
