Roasted Chicken
What you’ll need:
- 1 whole fryer chicken (when these go on sale, stock up with at least 3 – you can make meals much cheaper with whole chickens)
- 1 celery stalk, sliced lengthwise
- 1 onion, cut into 2″ strips
- 3 potatoes, quartered
- Any other veggies you like: squash,zucchini, etc.
- Olive oil
- Italian Seasoning
- 1/2 c. White wine – if you have it handy
- 2-3 cloves of garlic, sliced
Heat the oven to 350 degrees. Coat a casserole or roasting pan with olive oil. Place the chicken in the center. Pile veggies (including the garlic) along the side of the dish and cover with more olive oil. If you want the white wine, pour it over the chicken now. Sprinkle Italian seasoning liberally over the chicken and veggies and salt and pepper as you desire.
Bake in the oven for 1-2 hours, depending on the weight of the chicken.
