Homeade Red Beans & Rice
What you’ll need:
- dry kidney beans, soaked for at least 6 hours (overnight is best)
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 celery stalk, chopped
- garlic – 2 clove minimum
- Tony Chachere’s Cajun Seasoning (or any brand you prefer) – at least a tablespoon, but keep testing it to make sure it’s spicy enough
- Polish Sausage (or any type you prefer)
- salt & pepper, as needed
- rice – to keep it cheap and healthy, I use brown rice (not instant)
In a pot, throw everything together and bring to a boil. Lower the temp to about med-low and then let cook for several hours until beans are tender and it tastes just right.
Cook the rice in a steamer or put water & rice in a casserole dish, microwave for 5 minutes (to get a boil on) then microwave at 30% power for 40 minutes (or as long as the directions say for stove top. I find that rice in the microwave cooks better than on the stove, as it doesn’t get gooey.
