Black Bean Quesadillas

I found this recipe on the internet a LONG time ago. I wish I’d had the foresight to save the address of the website. It was a personal website and I do not know if it was even their original recipe. I am letting you know it is not my original recipe. If it is yours and you can prove to me it is your original recipe, I would be more than happy to give you credit and provide a link back to your website listing the recipe.

 What you Need:

  1. 6 large flour tortillas
  2. 8 oz shredded Cheddar cheese
  3. 3/4 C black beans (rinsed and drained
  4. C diced tomatoes (rinsed and drained)
  5. 1/2 onion, sliced
  6. 1/3 C chopped fresh cilantro (usually I used dried cilantro, unless I feel like splurging.)
  7. 1 tsp. lime juice
  8. 1 tsp ground cumin

Combine black beans, onions, cilantro, lime juice and cumin.  Spoon into tortillas and roll.  Place tortillas in greased glass pan.  Sprinkle with diced tomatoes and top with Cheddar cheese.  Bake in preheated oven at 425 until cheese starts to brown.

UPDATE:

After combining the bean mix, I simply place a spoonful or two on a tortilla, sprinkle some cheese and fold it over – frying it on a skillet like a regular quesadilla. Yummy. Maybe a little less healthy – but yummy.

For the Rice – I cook my rice in the microwave. I add the amount of rice and water called for on the side of the bag and add a bit of cilantro and garlic. I microwave the rice on high for 5 minutes and then 45 minutes on 40% power.
