Amy’s Black Bean Enchiladas

veganenchiladasA few weeks ago, I kicked around the idea of becoming vegan. You can read more of that here and what possessed me to even consider the idea of going without cheese. If you know me, you know that is SERIOUS. I often said if I were shipwrecked on an island, I would only need bread, wine & cheese and my dietary needs would be set. (Yeah, yeah – water too, but that’s sorta boring).

Anyhow, as I’m considering the idea, I’m looking at what my food options are,  researching what it would mean to be vegan and researching the food industry in our country. I’m checking my local walmart, albertsons and what-not to see what choices I do have. I don’t exactly live in the SF Bay anymore. My options for this sort of thing are limited. What do I find? Amy’s Kitchen.

I swear to God and Google I am NOT getting any money from Amy’s to write this (though I would appreciate a freezer full shipment of all the vegan options, Ms. Amy if you are listening). I have to say, vegan or no vegan, Amy’s is absolutely delicious. They are the VERY best frozen dinners I’ve had in my life. I started with the Black Bean Enchiladas. It was frickin’ sweet and smelled as good coming out of the microwave as it tasted in my mouth. As my grandpa used to say, “It’s so good it makes you wanna slap your momma”. (Though I have NO idea why something tasting good inspires domestic violence :) but when he used to say it, it just made it sound that much better.)

I’ve also had their burritos, the Terriyaki bowl (the BEST Asian frozen dinner I’ve ever had the chance to eat) and the Pesto Tortellini bowl, which is NOT vegan but still delicious.

Even if you are not considering a veggie lifestyle, you have to try these meals. They use organic ingredients and don’t thrown in all the preservatives and crap a lot of other companies use.  If you do try it, let me know what you think!

    You are so funny! What a wonderful endorsement. Amy’s deserves a shout out like this. Their food is delicious and healthy, too. If they do send you the freezer full of food, can I come over for dinner? (I hate to invite myself, but hey, it’s Amy’s.) :)
